Homemade Fruit by the Foot

This was much easier than I thought!  I experimented with a couple of different ways and this was the one that worked best and was easiest.  You can use any type of fruit you want.  I happened to have some quite ripe figs and peaches, so that’s what I used.

Ingredients
12 ripe figs, roughly chopped
6 ripe peaches, peeled and roughly chopped
2T stevia

Preheat oven to 170 degrees.  Place all ingredients into a large saucepan.  Use a hand blender to puree everything together.  (Or use a blender and pour into the saucepan).  Cook on medium heat for approximately 30 min, or until mixture has thickened.

While mixture is thickening, line a cookie sheet with parchment paper and spray lightly with coconut oil.

Once the mixture has thickened, pour onto parchment paper and use a spatula to spread it into an even layer, about 1/3″ inch thick.  The trickiest thing (but very important) is to get the layer even across the pan.  Make sure not to make it too thin, or you will have crispy fruit chips.

Place the cookie sheet into oven and cook for approximately 8 hours.  I prefer to set the cooking timer and put it in before bed and let the oven turn off on it’s own.  When you take it out of the oven, check to make sure that it is completely set all the way through.  If it’s still gooey put it back in until you get the proper texture.  Trim any excess parchment paper and then cut the fruit leather and parchment paper together lengthwise into about 8 – 1″ stips.  Then roll them up and put them in a baggie or Tupperware and keep them in the fridge.
